More Family Favorite Recipes!


My mom's Turkey Souffle
(baked left over turkey or chicken)
1 pkg. prepared stuffing
3 cups ground or chopped turkey (ground as in a food processor or grinder)
4 tablespoons margarine
1/2 cup flour
4 cups chicken broth, consomme, our bouillon
6 eggs
Prepare stuffing according to the directions, on package and spread in bottom of large, shallow baking dish. Cover with turkey. Make sauce of margarine, flour and broth (like white sauce) Stir a little into beaten eggs, then stir all in and pour over turkey and stuffing. Bake at 350 degrees about 45 minutes to an hour till knife comes out clean.

Sauce to go over turkey;
1 can mushroom soup
1/2 a cup of milk
1 cup sour cream
Heat and pour over turkey dish to serve or on the side. Sprinkle paprika on top to make it colorful and less bland looking!



Artichoke Delicacy
2 jars marinated artichoke hearts, chopped
1/2 onion chopped
1/2 lb.grated Sharp Cheddar cheese
6 soda crackers crushed
4 eggs slightly beaten
Saute Onion in artichoke marinade juice, then add artichokes. Add cheese and crackers, and lastly add eggs,salt and pepper heat and mix. 
Bake in pan in a 325 degree oven for 30-40 minutes. It can be made in the morning and cut into squares, heat before serving. I like to use it for a side dish and it can work well for parties and brunches etc.
